The most beautiful game in the works (in my opinion) would be Elder Scrolls: Oblivion, hands down. The graphics are amazingly beautiful, and the world's design looks as hauntingly amazing as its predecessor.

And the bosses were sweet. I'm not sure how exactly the were rendered but it was an interesting visual effect and they were huge. My faves were the blue whale with the gaping maw, the bird guy on the moon and the final, totally ticked Godzilla! Baby Bowser O_O
