That one is my absolute favorite. The OVA open was good too - I especially appreciate the English version of the song. All the Full Moon wo Sagashite ones were excellent as well (I don't think I skipped over them at all).

Now that you mention it, it is very good. I liked Season 3's song better, but overall the animation and song for season one has been the best.

I like the openings for Kaleido Star,.HACK//sign, Final Fantasy Unlimited, His and Her Circumstances, Noir, and the Cowboy Bebop Movie.
EDIT: I just saw a fansub of "Bleach" last night. That opening is pretty cool too.

Can't believe I didn't put Trigun...especially given my avatar. Also, somebody mentioned "Every heart," from Inuyasha. It's good, no doubt, and I'd like to learn to play an arrangement of it someday, but I have to say that I like "Dearest," a lot better.

At the top of my list would be the opening to
Beck (I guess it's not a totally well known anime) - Hit in the USA by the Beat Crusaders (it's a music and rock themed anime, so I guess good opening would be expected).
Others would be
Naruto 2nd opening - Haruka Kanata (Asian Kung-Fu Generation)
Naruto 4th Opening - GO!!! (Flow)

I've just started watching Last Exile, and I really dig both the opening and closing. The closing song kind of reminds me of the closing song from Outlaw Star.

well, i saw that someone posted in reference to their favorite endings, so i'm going to do likewise
trigun - just looks awesome and the music's kinda catchy
megas xlr - yeah, i know, not exactly anime, but it does parody a lot of different anime, and the ending is hilarious everytime
most of the inuyasha endings are pretty good, the one they're showing now on a/s is boring to me though and the music makes me sleepy
wolf's rain - this one is basic, and really good, just the shot of kiva running in the snow in slow motion and the music that is played with it works perfectly, kinda reminds me of verses in the bible that talk about God's people being drawn to Israel

It's Dual! all the way, baby! I also like the openings for Fruits Basket, Last Exile, Super GALS!, Kaleido Star, and the first opening for Gundam SEED. Oh, and I can't forget Azumanga Daioh and Sailor Stars. Hmmm.... that's all!

My favourate songs are all from Kannazuki No Miko. The opening, "Re-sublimity", the ending "Agony, and the insert song in episode five "Supparation ~Core~" all done by the vocalist KOTOKO. All of KOTOKO's songs are an ear pleasing mix of techno and J-pop and my favorate type of music is techno. ^_^
