Hearing. I wouldn't have to be bothered by people talking when I was trying to read, I would still be able to draw/look at art, etc. Definitely.

Working the post office in NYC. Monkeys can be quite vicious from what I hear. I want to keep my face. Hopefully the New Yorkers would have pity on the simple little Pennsylvanian that is me.

A leg, I guess. I was tempted to say arm (so I could be like Red Haired Shanks) but I barely use my legs anyway and I need both arms to type on forums quickly.

Chicken, because it comes from a small egg. A polar bear would be like having octuplets.
Also, chickens are easier to care for.
