Sadly, I do not watch many anime. lol. I usually instead read manga. That certainly suffers from the problem of lackluster, rushed, or simply obtuse endings. Some are good, yes, but rarely have I seen an ending and really felt satisfied with it.
In what anime I have watched to the end, without giving spoilers:
Azumanga Daioh - I actually thought this ending was quite well done and brought things to the right emotional closure.
Inuyasha - I was not happy with the ending of this series. Not because of what happened but because of what was left unresolved.
Macross - Another good ending, I thought.
Akira - I loved the movie but found the end somewhat unsatisfying. It also seemed rather obtuse and difficult to follow.
Ghost in the Shell (movie) - The ending here was interesting. I found that a certain lack of resolution was present, but it was workable.
Lupin III (First and Second Series) - Lupin tends not to have a whole lot of continuity anyway. Each episode is really a stand-alone plot save for the few which featured a returning villain. The finales for each series followed in this vein, presenting what were essentially just good Lupin episodes.
